Dessert wine can often be very versatile, especially when it has as many layers as this. Serve throughout a meal, specifically with blue cheese, foie gras or light fruit based desserts, Sicilian lemon tart would be perfect. Yvonne & Rene Hegoburu built their home in an idyllic spot on the top of a hill at the foot of the Pyrenees about 6km from the town of Pau. They enjoyed many happy years here & often dreamed of building a vineyard. Rene died before he could see their dream to fruition but in 1987 at the age of 60 Yvonne developed Domaine de Souch in his memory. Delightfully sweet yet sharp at the same time. There is depth from ripe pineapple & melon fruit, zing from notes of lime marmalade & a twang of fresh acidity that cleans the palate on the finish.
