This is such a robust white wine with amazing layers of complexity that it will stand up to rich poultry or white meat dishes, howeverwill also compliment a richcreamy pasta, smoked fish or rich cheeses. Think a glass of Pouilly Fuisse with a creamy Epoisses. Sophie Cinier set up her vineyards in 2000 & took her time to understand the vines, her land & her own winemaking style. The vines have an average age of 30 years, making them andold vinesand, or andvielles vignesand which means they produce less fruit but the fruit they do produce is much more concentrated than from younger vines. Add to this lime rich clay soils & the result is excellent wines with true character. On the nose there is so much going on, aromatic notes of white flowers, ripe pears & touch of vanilla. The palate is just as inviting offering smooth texture, nutty, buttery richness & a delightful elegant, mineral finish.
