The smooth, creamy texture works perfectly with cheese of the region, especially the chevre, & the nutty richness from the oak barrels means the wine is a great pairing to pork belly, smoked salmon, poultry dishes & rich quiches. Sophie Cinier set up her vineyards in 2000 & took her time to understand the vines, her land & her own winemaking style. The vines have an average age of 25 years, making them andold vinesand, or andvielles vignesand which means they produce less fruit but the fruit they do produce is much more concentrated than from younger vines. Add to this lime rich clay soils & the result is excellent wines with true character. Such a beautifully balanced Chardonnay with fresh apple & grapefruit notes, warm spice & nutty characters from the large oak barrels in which some of the wine was fermented. The finish is elegant & rounded with toasty notes & a buttery richness.
