We salute le colonel
- five strips of sedge leaves which are wrapped round the Livarot to stop it bulging give this lovely cheese its military nickname. It glossy reddy-brown washed rind looks fantastically rustic. What's it taste like? Livarot is washed in brine & coloured with annato to make an exuisite pungent soft cheese, rather like a Pont L' Eveque but with more aroma & flavour. Where's it from? Made only in the Calvados region of Normandy this unpasteurised version is affineured by Jacques Hennart. Livarot comes as a 250g circular whole cheese in a wooden casing.
