Our delicious raw carob powder comes from the pods of organically certified carob trees in Italy. Its flavour is full-bodied and sweet. This crystal-like powder freshens up and cools all recipes, and gives extra depth to chocolate recipes in particular. Since carob is naturally sweet, less additional sweetener is needed when using in recipes. Most other carob powders are cooked to at least 200 degrees Fahrenheit, whereas this is never heated above 100 degrees F (37 degrees C) during its unique grinding process, making it a wonderful raw food. People who don't know carob very well think it's a health food shop version of chocolate, but it's so much more! Try mixing carob with raw chocolate for a lovely sweet, high calcium treat. Chocolate is high in magnesium, and carob has lots of calcium; they dance together in a tasty delight on your tongue. Carob is a legume that comes from the carob tree (Ceratonia siliqua), an evergreen tree native to the Mediterranean (it is actually a shrub that is trained into tree form by pruning). Today carob is also grown in other warm climates including Florida and the south-western United States. The carob tree bears fruit (carob pods) after six to eight years of growth, and can easily bear 100 pounds of pods per year by its twelfth year, increasing to an average of 200 to 250 pounds annually as the tree grows older. It can continue to bear fruit for 100 years. The pods are reddish-brown and can be up to a foot long. Carob has been used for food for over 5000 years. It is also called "honey locust" or St. John's Bread as this was consumed by John the Baptist while he was in the wilderness (Matt. 3:4). The husks that were eaten by the Prodigal Son in Jesus' parable (Luke 15:16) were discarded carob pods. The word carat, which is still used today to measure gold and diamonds, comes from the Arabic name for the carob seeds because of their uniformity in weight. Carob is very nutritious. It contains as much vitamin B1 as asparagus or strawberries, as much niacin as lima beans or peas, and more vitamin A than asparagus or beetroots. It also contains vitamin B2, calcium, magnesium, potassium, and the trace minerals iron, manganese, chromium, copper, and nickel. Carob contains approximately 8% protein and is a good source of fibre. Compared to chocolate, carob is three times richer in calcium, has one third less calories and seventeen times less fat.

It is indigenous to the Amazon Basin and is mainly cultivated between Maues and Manau in Brazil. The fruit of Guarana is hazelnut size, deep yellow to red orange which bursts open to expose one purple-brown to black seed. The traditional uses of the seed include headaches, fever, cramps, stimulant, aphrodisiac, prevention against bacterial infections, tonic, and supporting good health. Persons with mental and physical disorders should consult their heath care professional before using this product. The Food Standards Agency recently asked the Committee on Toxicology to consider analytical data detailing the level of cyanide found in bitter apricot kernels found on sale in the UK. The COT is an independent scientific committee that advises the Agency on all toxicology issues, and following a discussion at an open meeting in March 2006, members concluded that the daily consumption of cyanide found in bitter apricot kernels should not exceed 0.02mg/kg bodyweight. The Agency has acted on this advice and on the 11 April issued a press release stating that consumption should not exceed 1-2 bitter apricot kernels per day. I have attached this press release for your information. Bitter apricot kernels are foods, and in accordance with Article 14 of EC Regulation 178/2002 (general food law) as implemented by the General Food Regulations 2004 (SI 2004/3279) it is your responsibility to ensure that the food you sell is not unsafe.
