From selected vineyard sites in Stellenbosch, where the climate is cool Mediterranean, & soils are of loam & granite. Varietal characters are preserved in this Cabernet by cold soaking before fermentation, & maturation with oak staves for just 8 months. Nose & palate are dominated by blackberry & cassis, with subtle hints of mint leaf & nutmeg showing through. Oak influence is restrained, providing gentle polish to the ample tannins. Welmoed recommend serving with Tzatziki roast beef, or rack of lamb with sauteed vegetables.
