The winemaking process for this Sauvignon is all about freshness through cool temperatures, from harvesting entirely by night, to crushing, fermentation & filtration all taking place at no more than 12 Celcius, followed by one months lees ageing. Pale, bright, with youthfully verdant hues. The nose offers lashings of lime & grapefruit & hints of thyme & asparagus. Crisp, citrussy acidity provides good length & palate refreshment. Drink now for maximum fruit freshness & impact. superb for parties, or with light salads & prawn hors douvre.
