This means the grapes are picked at the peak of their ripeness & left to dry in special crates until they’ve lost 30% of their volume. It concentrates all the sugars & flavours in the grapes, making the texture seriously lush & velvety. With this intensity you won’t believe the price. Think stewed plum, blackberry & juicy cherry flavour, with notes of violet & heady sweet spice. It’s fantastic with meat ragù piled over pasta.
