Grown in the Sidamo Province of Ethiopia, Ethiopian Yirgacheffe is among the best of the washed coffees: coffees that undergo a process before roasting, whereby the cherry of the bean is removed before the bean itself is dried. Washed coffees benefit greatly from this process, as once the cherries are immersed in water, unripe ones will float & be removed from the process, while ripe ones will sink & be used, thus ensuring the highest quality beans in each batch. Legend has it that the coffee plant was discovered in Ethiopia by a 9th century goatherder, & to this day the humble coffee bean remains an integral part of the Ethiopian economy. Ethiopian Yirgacheffe is a smooth, mild & great tasting coffee that can be enjoyed straight from the cafetiere all though the day, with a distinct fruit-like acidity that adds a pungent addition to the traditional mocha flavour.
