Hydnum repandum, most commonly known as Hedgehog Mushroom, are notable for their spore-bearing structures which are shaped like teeth rather than gills & are collected up at the end of summer to preserve their fine amber color & strong aroma.
Rehydrate the Hedgehog Mushroom by soaking them in warm water until they are plump (should take about 10 min). Then, saute them with a little butter, a pinch of sugar & some of the soaking liquid & let them brown gently. Chop as required & eat them as they are or integrated into sauces, soups, stir-fries, rice or pasta dishes.
