- Gelidella Acerosa) is vegetarian & vegan substitute for gelatin made from a red algae. First discovered in the 17th century in Japan by Minora Tanzaemon, where it is known as ‘ Kanten’. Agar Agar can be used as a gelatin substitute as well as a thickening agent in huge range of dishes, from caviar, to vegetarian sweets, ice cream, soup, jams, custards, jellies & more. Agar Agar has a higher melting point that traditional gelatine which can cause jellies to have a chewy texture, rather than melting in the mouth.
When using agar agar powder, add 1 teaspoon for agar agar to 235ml of any cold liquid like water, fruit juice, milk, & bring to the boil. Once boiling let it simmer for 1-5 minutes while continuing to stir, then combine with other ingredients. If you want to use it as a thickening agent follow this same method, & add small amount to custards, sauces etc.
